Apart from waiting until there is a 2015 plated shipment you don't have many options.
I would get to another Ford dealer ASAP and get them to give you the current ST stock list Aus wide.
If you look keen to buy they will supply as this information will be available on the Ford dealer network.
I would also lok at going in on the 3rd day of your cooling off period and demanding hat they lock in a White or invoke the cooling off option.
This frees you up to renegotiate the deal with them or another dealer
You have almost 4 weeks for the 2.9%, so don't feel rushed.
