I have had the good fortune of installing a kitchen in Bathurst a few months ago, this building "Web chambers" was originally the hub for grocery distribution from the 1800-1900 for the central west.
Bought by developers, with a vision of restoring it to as close as possible, they came across a sandstone block with an identification of the capsule. upon opening it, the items of their time "newspaper clips ETC" were authenticated and sit proudly for all to view. "Cobblestone lane" has the renovated "well" 21mtr deep in the middle of the dining area for display as seen in the pics i took on completion. Even the horse stables have been restored as a coffee area in the rear of the building. The restaurant has an Australian Brasserie menu to suit the theme of the grand old building, with more to come as the building nears completion.
