Smile Fault finding on AU's

Can anyone tell me who is good at finding faults and flash tuning in Sydney? I have a couple of issues that sinclair ford and a few other mechanics couldn't work out.

The problems are:
1. When engine is cold it is jittery (have replaced coolant temp sensor- no defference)
2. When engine is at running temp it is hard to start. I have to put foot on accelerater to get it to start, then it blows a cloud of black smoke. (replaced pump, filter, fuel reg and tested - no presure loss. injectors been serviced and are fine)
3. Has a rough idle and only gets up to 300km's to a full tank.

Engine has been rebuilt with 347 stroker kit and bigger cam about 4000 k's ago but the above problems were there before that.

If anyone could lead me in the right direction that would be much appreciated.
