Nick, it is going to depend on what she likes. Set yourself a budget and go window shopping alone or with a mate. Suss out the prices and styles you like.
Then, either make an executive decision and buy something, take her shopping with you, or another option... Buy a diamond and give it to her. That way she can have it made in any style she would like. I think 2k and upwards is a fair figure for an engagement ring.
