Absolutely.
But you try doing it where the emergency brake is activated/deactivated with your left foot and not by hand. I did my licence where the gears were in the column and the emergency brake was in the dash. Much easier these days with it all located in the centre console.

Me personally I have never used the handbrake to do a hillstart. I find its not needed. As long as you know the car and are quick on the clutch, you're ok.
