Do most dealers do oil changes by removing the sump plug and draining the oil or do most remove the oil with a pump through the dip stick tube?

Sump plug, thats what its there for.
Never herd of pumping it out via the dipstick tube. |

I don't think it's overly common as in most cases you require access under the vehicle to switch the oil filter. While the car is up in the air you may as well empty from the sump plug.
Example on a Smart car, not sure why they would bother considering they had it up on the hoist for the filter though... |
