My vote would have to go to hocus pocus a song by a 1970's dutch rock group called focus, It kinda has some vocals, but it's yodelling so I reckon it still counts as instrumental, really wild flute solo in there as well. In terms of modern stuff, POD have done some good short instrumental bits.

And Metallica's older stuff has some good guitar instrumentals.... Also the guitar in Guns n Roses "Sweet child of mine" is pretty good. |

The late great Stevie Ray Vaughn, get yourself a copy of his album "Couldn't stand the Weather". Not pure intrumental, but not a lot of singing either.
I Think the track everyone would recognise is Scuttlebuttin'. The other is "Cavatina" by John Williams, everyone recognises this as the theme to the movie "The Deer Hunter"
