It’s becoming clear that Australia’s best chance for post-CV economic recovery is powered by bakery goods. This is obviously where the focus of TAFE reform needs to aim, with new levels of proficiency in sausagerollery and piemanship.
In the meantime there’s potential for a vertically integrated health program; accredited face masks that smell just like your favourite pie, pasty, custard tart etc. I think consumer uptake will be very enthusiastic! |

During the Covid 19 lock down in SA, I made some dessert bowl, man sized meat pies and sent one to a self confessed pie connoisseur who was in need of a moral boost.
This was their review. I was first met by the sheer size of this behemoth of a pie. The elegant way the pastry decor adorned the top, the expert way the foil was folded to carefully carry it's precious contents, instantly indicated that this was no ordinary meal. The glorious smell that wafted up through the cracks in the top, carressed my senses as a wave of nostalgia hit me hard. I closed my eyes and I was a young child, standing in my Nana's kitchen whilst she baked and cooked around me. I knew this was a moment to be savoured. As I carefully removed the prize from its metal cocoon, I amazed at how the structure remained in tact, standing strong like a Castle's keep. As I plated up this truly special creation, I was able to see it in all its glory. And it was beautiful. Scared to destroy its beauty, hunger overcame me and I carefully pierced it's golden exterior with my firm utensil. It put up some resistance as my fork sank further into its flesh. My knife, not wanting to miss out, swiftly joined it's brethren in the slaying of this beefy beast. The guilt of butchering such a treasure was short lived as the full fragrance held within invaded my nostrils. I could no longer hold back, I savagely tore a chunk and escorted it into my waiting mouth. As soon as it touched the waiting taste buds, a wave of pure bliss took hold. The nostalgia experienced earlier, quickly shifted into a forgotten memory. This moment truly conquered any past pie experience. I never knew I could taste pure heaven in such a way. My teeth were not required at this party, for the beef was just that tender. The combination of carrot and beef, whilst a classic, truly was a marriage from the Gods. I could taste the care and dedication with each bite as I found myself gourging on this gargantuan masterpiece. As they say, all good things must come to end and I was left with the bland display of the plate beneath. I felt as though I was walking on air, wishing I could re-experience the majesty of what just occurred. I knew that I was surely blessed for having been given the opportunity to sample a delight from above. I returned back to working from home duties with a new outlook, ready to finish up the day in enlightened way. Fin.

Shearer’s Cook bakery at Woolooware/Jenola - excellent pies and sausage rolls
Vickers bakery at Jannali - old school cakes, apple turnovers with cream, Chelsea buns, laminations, vanilla slices (passion fruit icing) etc Robertson Pie Shop - good pies (not outstanding), excellent location Ross bakery, Ross Tas. - great vanilla slice (but not the best in the world that they claim).hard pastry on top means custard exits sideways when you take a bite.

Get some blue boiler peas, soak in bi carb & water overnite, drain then boil in fresh water or chook stock. You will end up with a proper green slushy goodness to drop your pie into...........cheers

Is O'Connel Bakery still around in North Adelaide? Lived there 11 years ago and I never got a bad coffee or custard donut from them ever - and open 24/7!!!
Malaga Markets Bakery here in Perth is fantastic. A dozen fresh jam donuts for $11, how can you say no?? |

I remember recipes for oxtail stew, and oxtail in trays, in the butchers’ shops. And tongues! You don’t see that stuff prepacked on the shelves at Colesworths.

Another day, another bakery, this time Mawson's in Euroa.
Had 2 chunky steak pies this morning I like how they have a hint of tomato relish already baked inside, so there is no reason to add horrible tomato sauce. And this one is for Franco if he's tuned in. They do Kiev's. Bought this crispy fried chicken Kiev to re-heat up for dinner just now. Nice just with a side salad.

Yes, the foil tin is the guage and those babies are well above the lip, almost trying to climb out. This type of pie and the bakeries selling them should never be taken for granted.
