So parents are away in America for 3 weeks and My brother and I are home alone. What are some reasonably easy things to do for meals, just thought would post here to get some ideas on some peoples favourite easy to cook foods

Umm resonably would be too pro but have made my own butter chicken from scratch before with all paste/spices. And pan fried salmon that would be about as competent but willing to give anything a go what the worst that can happen .

Mexican, once you've made the spicy mince you can add to anything, tacos,nachos etc.

Spaghetti bolognaise is one of my staple got to's that's easy and I can add veggies to if I want to.

Kievs and oven bake stuff is also another

In all seriousness, I keep my cooking as easy as it can be while having variety. Usually each week we have spag bol, a modified chicken thing I get in a pack and turned from casserole to creamy pasta sauce (pasta is a trending theme in my house), butcher kievs with mash and veg, stir fry and thai curries. All require much the same amount of effort and skill give or take some prep here and there.

Veggie soup and minestrone is also a piece of ****.

Protein pancakes. low fat
1/2 cup of oats (old fashioned not quick oats)
4 whole eggs
dash of skim milk.

Throw it all in a blender. (nutribullet type is best) Blend with a half teaspoon of cinnamon. Poor in hot pan with teaspoon of olive oil, cook both sides slowly then serve with sugar free maple syrup.

Then hit the gym and smash some weights!

Cool that should work well with gym And have HEAPS of eggs lol. . . .How much is a dash? 1/4 cup or less?

Checked kitchen and I have one of these in my arsenal. So will probably make a whole lot of fruit smoothies

this sounds pretty good and easy.
does normal blender one work out ok or too rough? haven't got one of bullet things.

1/4 cup is fine. You can leave it out all together but I prefer a little to smooth it out.
I haven't tried a normal blender but you can give it a go. I use the Optimum 9400, it blends everything to fine powder even chia seeds.

*Edit. Vitamix is perfect!
Try some green smoothies with all your favourite fruit and veg. Don't forget the kale and baby spinach. A large cup of water and a whole tray of ice cubes so it doesn't heat up with the blade friction.

Breakfast:
Cereal
Bacon and Eggs
Pancakes
Omlette

Lunch:
Pies
Homemade pizza



Dinner:
BBQ
Taco or Burrito
lasange
or go fishing with the bro and get some fresh fish!

Oh yeah, favourite breakfast is juice (apple, carrot, strawbs, kale and maybe beetroot, add some lime for zing, and some chia seeds after for fibre and protein) or smoothie (berries, pomegranate juice, water and chia seeds. Maybe add some cacao. Now we're gettin' fancy), followed up by two hardboiled eggs about 20 minutes later.

Pretty easy, and you can do the eggs the night before.

Mainly because all i ever cook is butter chicken/Indian once a week :/

The hardest thing is sometimes thinking of stuff to cook? and looked at stuff online and got a few ideas but thought I would post here and get some opinions?

2 min noodles
In a bowl, add water and noodle packets, throw in some frozen veggies (peas &corn) put cheese over and nuke for 3-4min.

DONE !

Add egg if gourmet required

if you want some proper indian i.e. something an indian would make at home,
1 onion finely diced
4-5 cloves garlic finely diced
throw into pan with 2-3spoons of oil
cook until golden
add
salt/chilli to taste
1/2teaspoon of turmeric/1/2teaspoon of coriander powder
1 tomato finely diced
1 knob of ginger finely diced (about size of 1st knuckle on thumb)
cook for 30sec just to get it mixed nicely into onion/garlic

add
1 capsicum thinly sliced like for stir fry
1-2 potatoes sliced
cook until capsicum/potatoe is half cooked
add
0.5kg of chicken breast chunks
mix well over high heat
water as needed

let it boil until chicken cooked

serve with some plain boiled basmati rice

above will serve 2 hungry blokes


if you want real indian rice
1onion finely diced
cook in pot with 2-3 spoons oil
until golden
add salt/chilli to taste
stir to mix onion and spice
throw in 1 part basmati rice, thoroughly wash/flush rice 3-4 times to get rid off starch
stir thorourghly
quickly add 3 parts water
stir to get all rice off bottom/side of pot
leave over med-high heat, do not stir from this point or rice will turn out sticky
when all water boiled off
turn off stove and let sit for 5 mins
ready to eat

oh I can cook just hate the mess/cleanup after, thus the bbq post above

For my modified chicken thing (this is delicious. Everyone should try it) get :
Two packets of Masterfoods slowcooker farmhouse chicken casserole - ignore everything it tells you to do
500gm chicken breast diced
Two CCarrots sliced
Two sticks celery sliced
One onion cut into eighths
Cream

Brown the chicken and the onion add carrots and celery and the two packet mixes. Cook pasta while you're doing this. When the pasta is ready, drain and add cream to the chicken concoction. Cook till warm. Serve. Delish.

Spicy Meatballs and Romano Sauce
Sauce


Ingredients;
2 Shallots
4 cloves garlic

1 (12oz) tomato paste

fresh basil
fresh parsley
Italian seasoning, salt, pepper
2 tsp. sugar
¼ cup grated Romano cheese
200ml Red Wine


Method;
Remove all fat from the bacon rashers, brown garlic, finely chopped bacon and shallots in olive oil in bottom of large heavy bottom, I use Cast Iron, sauce pan. Add one can of paste and one can of water and red wine. Stir. Add remaining cans of tomatoes and spices (amounts to your taste) and let simmer for 3 1/2 - 4 hours. In the meantime, fry meatballs to brown them. Just before you put the meatballs in add the Romano cheese. 10 minutes before serving stir in chopped fresh basil and parsley.




Meatballs


Ingredients (serves 4)
250gm Beef and 250 Pork mince
1 egg
2 red birds eye chili’s, finely chopped
1/4 cup dry breadcrumbs
2 tablespoons olive oil
1 small onion, finely chopped
Flour


Method;
Sauté onion, place beef mince, chili, basil. egg and breadcrumbs into a bowl. Season with salt and mix together with your hands until well- combined. Roll mixture into even-sized balls, roll in flour


Heat 1 tablespoon of oil in a fry pan over medium heat. Add meatballs and fry them, turning often, for about 5 minutes until evenly browned. Remove and set aside. Add to sauce for the last hour.

2 tablespoons olive oil
1 small onion, finely chopped
Flour


Method;
Sauté onion, place beef mince, chili, basil. egg and breadcrumbs into a bowl. Season with salt and mix together with your hands until well- combined. Roll mixture into even-sized balls, roll in flour


Heat 1 tablespoon of oil in a fry pan over medium heat. Add meatballs and fry them, turning often, for about 5 minutes until evenly browned. Remove and set aside. Add to sauce for the last hour.

On a more serious note if anyone here likes a nice Bolognese here is our family recipe:

Topside minced (don't use normal mince its ****), pinch of chilli flakes, dice up brown onions, garlic cut up, dried basil, olive oil, few cans of peeled roma tomatoes (crush them up with hands), few bottles of tomato sauce (Pasatta, not the **** you put on meat pies, comes in big glass jar, actual tomatoes).

Olive oil, onions, garlic, minced top side, dried basil, pich of chilli flakes in pot, cook until meat browns and onions go translucent.

Chuck in rest of ingredients into pot and get a wooden spoon full of salt and chuck it in and cook on low for 3 hours on stove, stir every 20 minutes. Keep pot lid slightly open to let steam escape.

Choose your favorite pasta, we like Penne.

Needs grated Grana Padano to go on top once served.

Anything other than those ingrediants you face the firing squad.

Its important you cook it on low for 3 hours, stir every 20 minutes and you don't use regular mince, get some topside minced up for you from a butcher. Its not hard to make it just takes a long time to cook properly so set aside an afternoon for it, and smash out some AFF or Xbox

True true. An Uncle of mine that's passed, he was a Chef in the Italian Army during WW2, so I'm fairly certain he knew a thing or two when it comes to good food. He had a similar recipe and cooking process to yours. Never leave the lid off or completely on. If the steam can't escape, it won't thicken properly, and if you leave the lid off for too long, the house smells great, the street smells great, but when you go to eat it half the flavour is in the atmosphere,lol.

My recipe is almost the same as yours. Red wine, oregano and I fry up about 10 slices of hickory-smoked-bacon in a pan, slice it up into small pieces then bang it in the sauce. I put a tablespoon of the bacon oil in also, leaves a nice smoky flavour.

If anyone here loves Chicken Kiev as much as I do and you live around Melbourne's northern suburbs, someone here on AFF put me onto Kent's Poultry in Sunbury around the corner from the post office.

He does the second best Kievs I've ever tasted, unfortunately a butcher in Broadmeadows shopping center called "Wishbone" no longer exists, which took 1st spot for years.

Went on a massive Kiev hunt in Melbourne's Northern burbs to find a suitable replacement and Kent's Poultry in Sunbury is the best replacement I could find.
