Hi all,

Didn't know if anyone would be interested in posting their favourite recipes on here.

Also I thought we could do swapsies, as I am after a recipe for Lemon Myrtle biscuits and the net, strangely enough, can't seem to come up with them?! Does anyone have a recipe for these bickies anywhere?

I just purchased a lemon myrtle plant and wish to use it for yummy things like that

Nanna's Lemon Myrtle Biscuits

Serves:
Preparation time: 20 minutes
Cooking time: 12 minutes
Challenge: easy

200g margarine
100g sugar
100g macadamia nuts (almonds can be used)
225g flour
1 teaspoon baking powder
1 tablespoon lemon myrtle

Cream margarine and sugar until light and fluffy. Add nuts, lemon myrtle, baking powder and flour.
Form little balls (teaspoon sized) and press them flat with a fork.
Bake at 200° C until light brown, approximately 12 minutes.

There ya go my dear. ;)

Mega Milo
serves: me
prep time: 1 minute.

fill glass half full with milo.
add 1/4 of a cup of milk.
stir till its a paste.
fill rest of glass with milk and stir till glass is an even shade of brown.
for an added twist of sickness add 1 table spoon of thickened cream.

eat milo froth and drink the rest.

Ki Si Min - Great for diabetics and body builders (lots of protein).

500gm Lean Mince (heart smart if you're as cholesterol conscious as I am).
1 large onion.
1 tblsp Curry
1/3 kg of green beans.
1 can of crushed pineapple in natural syrup, drained.
1/4 -1/2 cabbage.
1 packet of chicken noodle soup with 1/2 usual amount of water.
2 grated carrots.
3 -4 celery sticks.
4 small zucchinis

Serves: Lots!

Open can of pineapple, and sit in strainer, push the pineapple down to get as much of the juice out as possible.

The fun part, wash and roughly cut up the vegetables (according to size preference) first then put them aside.

Get out the cauldron (you will need a large pot) add oil and bring up to temperature (smoke is not good, fire bad!!).

Add onion and curry and sautee the onions until they are a transparent yellow.

Add mince, cook until brown.

Throw chicken noodle soup and half amount of water in.

Toss in all the vegetables and pineapple.

Stir all the vegetables and get everything mixed up.

Put the lid on the pot and turn stove down to simmer, stir every 5 - 10 minutes so nothing sticks to the bottom of the pot and burns. Top up with a little water if/as needed.

Keep simmering for an hour or so to get all the flavours through.

Serve with fresh crusty bread rolls or just pig out, this is not going to make you gain weight! That comes with a 30 day money back guarantee! :P

Great for freezing too, be careful if defrosting or reheating in the microwave as the vegetables lose a lot of water and dry out.

Hey guys, check this out.................

Lemon Risotto

1 litre chicken stock
1 cup dry white white
2 teaspoons lemon rind
1 tablespoon lemon juice
80g butter
1 av sized onion sliced and diced
2 cups rice
1/2-3/4 cup parmesan cheese

Put stock and wine into a saucepan, bring to boil, add rind and juice, simmer covered.

Heat half the butter in a saucepan, cook onion stirring until soft. add rice; stir over medium heat until coated in butter mixture.

KEEP RICE MOVING OR IT WILL BURN! slowly add 1 cup of stock, and keep stirring the rice until it absorbs all the stock. then keep adding stock, 1 cup at a time, let it absorb then add more, you will see the rice start to swell as it takes in the stock. THIS SHOULD TAKE ABOUT 40 MINS. be patient.

When all stock is in, remove from heat and add remaining butter and stir in cheese.

Makes an ideal side dish to chicken, serve a chilled white wine. tonight I used a Hankin estate sauv blanc 2004 and my GF loved it. (the chicken was cajun, went well with the lemon in the rice).

Ok guys, your women are waiting. Get to it!!

A can of instant whipped cream is good on anything (try mixing some into your coffee)... even good for those... more romantic occassions : haha

An easy to make Lasagne

Instead of a rich cheesy sauce on top, this one uses a can of tomato soup with some grated cheese - a good balance between taste and lowering fat and easier to cook!

-800 grams beef mince
-1 x 575gram jar pasta sauce (but I use 2 x 375gram jars)
-1 chopped onion
-lasagne sheets (usually a full 250 gram pack is required, maybe more)
-420 gram can tomato soup - I use Heinz Big Red condensed soup
-1/2 cup grated cheese (but I always use more)

ok that's the original recipe, but I add
-up to 100 grams shaved/thinly sliced salami - chop into reasonable sized pieces. You can fry them up first or just cook them with the rest of the dish
-about 200 grams chopped mushrooms
-1 decent sized carrot, grated (increases the vegie count)

You'll need a large/deep frypan - even a wok would do the job
If you want to put fried salami in, do that first, then you'll have oil in your pan. Then cook the onions in the oil in the pan, then add the mince and break it up as it cooks. Once the mince is browned, add the pasta sauce and the (optional) mushrooms and carrot. Leave that on heat for another 5 mins or so.
In the meantime, start by putting the first layer of lasagne sheets down in a large lasagne dish. Then spread the salami pieces on that layer and subsequent layers depending on how much you have. By this time the mince etc should be ready to be put on top. Put down a thin layer of mince followed by a layer of pasta, then repeat and finish with a layer of pasta on top. Pour the can of soup on top, trying to cover the pasta. Then finish with grated cheese on top.
Bake for 25 mins @ 180 C.

For the health conscious:

Wheat and milk free orange cake

Ingredients:
2 oranges
250g brown sugar
250g almond meal
6 eggs

Method:
Boil the oranges in water for two hours. Drain, then when they are cool chop them up (keep the pips out) then blend.

Add everything else, mix well.

Pour mixture into well greased and floured cake tin.

Bake for 160C for 90 minutes until cooked.

This is great served with custard, cream or yoghurt (for those of us who like our milk products!).

For the meat eaters!

Bindi's Meatloaf

Ingredients:
1kg best mince
½ kg sausage mince
1 egg
1 onion, chopped finely
1 stick celery, chopped finely
1 carrot, grated
1 small capsicum, chopped finely
8 tbsp tomato sauce
4 tbsp Worcestershire sauce
1 tsp French mustard
2 tbsp strawberry jam
Salt and pepper

GLAZE:
8 tbsp tomato sauce
4 tbsp Worcestershire sauce
½ cup water
4 tbsp brown sugar
3 tbsp balsamic vinegar

Method:
Mix all the meatloaf ingredients together with clean hands then put in a baking dish (shaped into a square for easier cutting). Bake in a 180 - 200C oven for 30 minutes then drain any juices away.

While this is cooking, place all glaze ingredients in a saucepan. Heat until the sugar is dissolved.

Once you have drained the juices away, pour glaze over meatloaf then bake for another hour, basting occasionally, until cooked through.

Easy Banana Bread

Ingredients:
1 packet butter cake mix (store-bought)
Ingredients to make up the store-bought cake mix
2 tbsp sour cream
2 large mashed bananas (those ones you refuse to eat, all brown/black and rotting in the fruit bowl!)

Method:
Mix cake mix according to the directions and ingredients on the packet, but instead of using, say, 1 cup of milk/water, use 1/2 cup (example only - it depends on the cake mix instructions!). Add the sour cream and banana, mix well.

Place in a greased and floured cake tin (or muffin tin to make smaller cakes) and bake as per directions on the packet cake mix instructions.

On the milo thing instead of cream try putting a scoop of ice-cream on top...let it melt a bit before eating/drinking yummy...

This recipe frequently makes an appearance at my place in mornings, it's a bit of a tough one but I enjoy it-

Morning Delight

Ingredients-

2 portions thick sliced baked dough (commonly known as bread)
1 Teaspoon margarine or butter
1 teaspoon vegemite (for extra taste)

Method-

1. Select appropriate portions of baked dough
2. Place portions into appliance (toast machine)
3. Go to toilet or amuse one's self for 2-3 minutes while dough is heating up
4. When "pop' sound is heard, remove portions and place onto serving plate
5. Apply margarine with suitable spreader
6. Garnish with smearing of vegemite
7. Enjoy. Serves 1

ok heres an oldy but a goody..

Nana's Jam Drops.

3 oz of butter
3 oz of white sugar
1 egg
dash of vanilla essence
6 oz of self raising flour ( for the wheat free just replace with gluten free self raising flour no taste difference)
oh and a pinch of salt.

Cream butter and sugar. Add vanilla essence and beat. Mix in sifted flour and salt. Roll into balls and place an indent in middle. fill with jam and bake for 15mins at 180 degrees. Biscuits are cooked when they have a nice tinge of golden brown to them. Then eat.

2 Get in car
3 Drive to Hungry Jacks
4 pull up at speaker
5 Order a large greasefest burger combo
6 go to window
7 hand hard earned coin to pimple faced kid
8 take possession of bag of joy
9 move to car park and start to ho in
10 finish meal
11 drive home
12 haul *** out of car and onto couch
13 turn on channel 10 for a sunday of MOTORSPOT
14 Flicking over to sbs to get a glimpse of SPEEDWEEK 12-2 pm
15 Ocassionaly nodding off throughout the day
16 get up and go back to bed ready for work monday morning

WHAT YOU WILL NEED FOR THIS RECIPE

prepare the night before --A big night on the ****

a ****ed bloke
a car
a hang over
a Hungry Jacks
a pimple faced kid
a couch and a remote contol tv (the bigger the better)

Try this and you feel a heap better for doing so and then you can remember i told u so

Mix cake mix according to the directions and ingredients on the packet, but instead of using, say, 1 cup of milk/water, use 1/2 cup (example only - it depends on the cake mix instructions!). Add the sour cream and banana, mix well.

Place in a greased and floured cake tin (or muffin tin to make smaller cakes) and bake as per directions on the packet cake mix instructions.
I love bananana, I hope I can muster up the motivation to make your recipe!! I don't mind cooking - I just hate the dishes afterwards :yeees:

Oh, and I'll use my trusty can o' whipped cream for the topping!
